PENGARUH GLOBALISASI TERHADAP BUDAYA KULINER DI INDONESIA: STUDI KASUS RESTORAN DAN KAFE KOREA SELATAN DI KOTA MALANG

This reasearch aims to understand how globalization affects culinary culture in Indonesia through a case study of South Korean restaurants and cafes in Malang City using the globalization concept and the 3H scenarious concept. The concept of globalization will explain the impact of globalization on the culinary culture in Indonesia, particulary on South Korean restaurants and cafes in the city of Malang. Whereas, the 3H scenarious concepts is used to observe interaction between globalization and culture that occurs. This research uses the in-depth interview method with data derived from interviews with research subjects from South Korean restaurants and cafes in Malang City, as well as literature studies. The research results show that globalization has influenced the culinary landscape in Indonesia, particularly in Malang City. Globalization has facilitated the spread of Korean culture, including its cuisine, in the city of Malang, known as the Korean Wave. The Korean Wave has encouraged the establishment of many South Korean restaurants and cafes offering Korean cuisine, thereby demonstrating the absence of geographical boundaries between South Korea and Malang City. This research also analyzes the interaction between globalization and culinary culture using the 3H scenario concept. Basen on the analysis results, a tendency towards a hybridization scenario was found, evident in the efforts to present their cuisine as halal Korean food, and there is also a form of culinary fusion.
