Abstract
Background: Health problems resulting from eating fried foods cause cholesterol levels in the blood to become abnormal. If cholesterol levels in the blood are high, there is a risk of coronary heart disease, high blood pressure, stroke, diabetes mellitus and so on. In addition, weight will increase more easily, trigger the growth of cancer cells due to the high temperature cooking process, prone to decreased thinking ability, and trigger the growth of acne. researchers are interested in conducting research on the process of processing fried foods on health. Objective: To explore the impact of fried food processing on health. Methods: The design used in this study is qualitative research using Case Study Research. Data collection instruments in this study used semi-structured interviews and documentation. Data were analyzed using source triangulation. The samples used were fried food processors and consumers who had an impact on fried food processing. Results: From the results of this study, the impact of fried food processing on health was raised, there are 6 themes, namely the use of salt in food processing, the use of sugar in food processing, the appearance of changes in body conditions, the use of oil in food processing, unhealthy lifestyle habits in food selection, efforts to reduce the risk of disease. Discussion: This exploration emphasizes that frying food has a significant impact on human health. Therefore, there is a need for further awareness and education regarding the use of healthier food processing techniques in order to reduce the risk of health problems that can arise from the consumption of fried foods.
