Abstract
ABSTRACT
The honey bee type A. mellifera is a honey-producing insect that feeds on the nectar of randu flowers and calliandra. It is necessary to research the nectar of calliandra and randu flowers with A. Mellifera bees, so it is necessary to test the physicochemical quality such as smell, taste, color, and chemical properties such as pH, moisture content, and sugar content to distinguish the characteristics of the two kinds of honey and get the type of superior quality honey. . the study aimed to examine the characteristics and compare the quality of randu and calliandra honey based on physicochemical values. The research method is descriptive analysis with a quantitative approach. The results of the analysis showed that there was a significant difference between the two kinds of honey, namely having smell, taste, color, pH, and water content in accordance with the set standards and the cleanliness of the honey which was clean and liked by the panelists. Based on the comparison of calliandra honey, the highest points (8) were obtained from the score of taste, smell, color, cleanliness, preferences, pH, water content, and sugar. Meanwhile, raw honey got the lowest point (3) obtained from the preference score, pH, and water content.
