Abstract
This study aims to determine the manufacturer of nori with the addition of kenikir leaves with the effect of adding kenikir to nori from Euchema cottonii type seaweed based on the physical, chemical and panelist acceptane rates on organoleptic tests. The use euchema cottonii as raw material for nori requires the addition of other ingredients because the color of the nori produced is not green and less attractive. However, thera are still many nori, a plasticizer is added. The plasticizer used in glycerol.
The study used a factorial randomized block design (RAK) with four treatments and 4 replications so that 1 treatments were obtained. With a comparison between the concentration of kenikir leaves and seaweed which consists of consists of 50: 50 (P1) 30: 70 (P2) 25: 75 (P3) 0: 100 (P0).
The results showed that there was no effect between the addition of seaweed pulp and kenikir leaf pulp on water content, ash content , production efficiency, brightness (L), greenish (a-), yellowish (b+).
