Abstract
The use of natural ingredients as herbal drinks is becoming increasingly popular for improving health and preventing disease. Mangosteen peel contains antioxidants in the form of xanthones. Sambiloto leaves have therapeutic properties as anti-inflammatories and antioxidants. This study aims to identify the effect of the proportions of these two ingredients and determine the best formulation based on physical, chemical, and organoleptic parameters. The method used in this study was a factorial randomized block design consisting of a combination of two factors, namely mangosteen peel formula (2.5 grams, 5 grams, 7.5 grams, and 10 grams) and sambiloto leaf composition (0.5 grams, 1 gram, and 2 grams), which produced 12 treatment combinations with three replicates. The variables analyzed in this study included moisture content, ash content, total sugar content, and antioxidant activity. In addition, particle size, color intensity, and organoleptic tests were also evaluated. The research data showed that there was an effect of the different mangosteen peel and sambiloto leaf substitution formulas on physicochemical properties. The use of mangosteen peel was found to increase antioxidant capacity, while increasing the amount of sambiloto leaves decreased the sensory score due to a bitter taste. The best treatment was obtained in the M3S2 combination (7.5 grams of mangosteen peel powder and 1 gram of sambiloto leaf powder) with a moisture content of 8.24%, ash content of 4.48%, total sugar content of 1.84%, and a color and taste that were quite acceptable.
