Abstract

Indonesia has high potential of sea weed. Industry of sea weed material to be half-finished good, moreover fixed material, still few in Indonesia. While sea weed production in farmer level still in drying and chips making process. The limited sea weed production industry became obstacles in harvesting, so the development of sea weed became alternative needed, one of them by processing it into karaginan Karaginan source for tropical area is Eucheuma cotonii species which creating kappa karaginan, Eucheuma spinosum creating iota karaginan. Both kind of Eucheuma could be seen along Indonesian Beach. The research was aimed to find out about the influence of species and freezing length to the physio-chemical character of sea weed karaginan. This research used random group design with 2 factors repeated 3 times. F1 was kind of variety with 2 levels (E. cottonii and E. spinosum) and F2 was freezing length by 3 levels (24 hours, 36 hours, 48 hours). The result showed interaction between sea weed species and freezing length to the whitening, viscocity, sulfat rate, and gel strength. Best treatment resulted by treatment combination of V1T3 (spesies E. cottonii and freezing length 48 hours) with 20,11% solution, ash rate 15,01%, sulfat rate 14,00%, viscocity 2,53 dPas and gel strength 6,62 mm/g/sec.
