Abstract

This study aims to identify and reduce waste in the surimi production line at PT. Starfood International using the Lean Six Sigma approach. The research method applies the DMAIC stages (Define, Measure, Analyze, Improve, Control) supported by analytical tools such as Value Stream Mapping (VSM), Process Activity Mapping (PAM), Seven Waste, and Failure Mode and Effect Analysis (FMEA). Based on the Seven Waste measurement results, the three largest wastes identified were overproduction amounting to 43,850 kg, defects amounting to 23,760 kg, and waiting amounting to 22,480 kg. The average sigma value of the surimi production process is 3.44σ, indicating that the process still produces defects of 25,942 DPMO (Defects per Million Opportunities). The FMEA analysis shows that the most critical waste has the highest RPN value of 336, caused by overproduction and defects due to non-standard raw materials and long storage time in the cold storage. Improvement proposals were developed using the 5W+1H method, including stricter raw material selection, demand-based production planning, and regular machine maintenance to reduce waiting time. The implementation of these proposals is expected to improve production process efficiency, reduce product defect rates, and optimize the performance of the surimi production line at PT. Starfood International.
