Abstract

The halal supply chain plays a vital role in maintaining product integrity and consumer trust within food industries. This study aims to analyze and evaluate potential risks in the halal supply chain of CV PUKID BUNDAANI, a halal yogurt producer. The analysis integrates the Supply Chain Operations Reference (SCOR) Model and Fuzzy Failure Mode and Effect Analysis (Fuzzy FMEA) to identify, assess, and prioritize risks across five supply chain processes: Plan, Source, Make, Deliver, and Return. Additionally, Fault Tree Analysis (FTA) was applied to determine the root causes of high-priority risks and formulate targeted mitigation strategies. The findings identified 21 potential risk events, with the highest Fuzzy Risk Priority Number (FRPN) value of 742 associated with incomplete halal documentation from suppliers. Other key risks include the absence of a cooling system during distribution (FRPN 493), unapproved halal certification (FRPN 407), and lack of customer satisfaction strategies (FRPN 387). These findings highlight weaknesses in documentation, process control, certification management, and customer engagement. The study recommends the implementation of a comprehensive Halal Product Assurance System (SJPH) and digitalized monitoring of supplier documents to enhance compliance and reliability within the halal supply chain.
