Abstract

This research analyzes the differences in antioxidant content, phenols, flavonoids, total dissolved sugar content, viscosity and color intensity in monoflora honey: coffee honey, kale honey, rubber honey and multiflora honey: NTT forest honey, 335 forest honey, acacia honey. The test results showed that coffee honey had the highest antioxidants at 9.54%, followed by rubber honey at 9.51% and kale honey at 9.48%. For multiflora honey, acacia honey has the highest antioxidant content of 9.53%. The highest phenol content in coffee honey is 0.970 mg GAE/g, while forest honey 335 has the highest value for multiflora (0.130 mg GAE/g. Total flavonoids in forest honey have the highest value of 0.913 mg QE/g. The highest sugar content is in acacia honey 27 .60oBrix and the highest viscosity in NTT forest honey is 53.8 P. Research results show significant differences between honey monoflora and multiflora.
