Abstract

Herbal plants are types of plants that have medicinal properties. Herbs are classified as spices and fruit plants that can be used to treat various diseases. Moringa leaves contain nutrients such as carbohydrates, proteins, fats, and various minerals and vitamins. Moringa plant (Moringa oleifera) especially moringa leaves have the potential to be made functional drinks rich in antioxidants because they contain vitamin C (ascorbic acid), flavonoids, phenolic and carotenoid. Jasmine flowers contain flavonoids, phenols, saponins, essential oils, and so on. In addition, jasmine flowers also have aroma-giving compounds, namely z-jasmine, indole, neurolidol, linalool, indole, and benzyl benzoate. The problem with this moringa leaf herbal drink is bitter taste, pungent smell, and the pH value which is still not optimal This study aims to determine the effect of the addition of jasmine flowers to the characteristics of herbal drinks. The use of treatment differences exerted a significant effect on vitamin C, antioxidant activity, and pH. The best treatment was shown in treatment B0 (100% moringa leaves : 0% jasmine flowers) which obtained the average value of water content of 15.66% ash content of 9.06%, vitamin C of 10.65%, antioxidant activity of 44,23, pH of 5.3%, color 3.16( neutral), taste 2.76 (dislike), aroma 3.28 ( neutral), preference 2.84 (dislike).
