Abstract
Forest honey is a natural product produced from the nectar of forest plants that have high potential as food and traditional medicine. One of the requirements for honey to be consumed is to have honey quality standards according to SNI. Most forest honey in Indonesia has not been fully studied. Parameters tested included
moisture content, acidity, reducing sugar, hydroxymethylfurfural (HMF) content, viscosity, and color (L*, a*, b*). Tests were carried out based on the SNI 8664: 2018 method and previous references. The analysis results showed a moisture content of 26.5%, acidity of 33.1 mL NaOH N/kg, reducing sugar content of 63.6%, HMF content of 0 mg/kg, viscosity of 50.83 poise, color value L* 26.8; a* 0.8; b* 0.5. Based on these results, forest honey from the research location meets SNI standards on acidity, HMF, and viscosity parameters. However, the moisture content exceeded the maximum threshold, and the reducing sugar content was below the minimum limit set in the standard.
