Abstract

The part of the pineapple fruit that is widely used is the flesh, from the processed pineapple fruit, the pineapple weevil waste is produced. The high amount of pineapple weevil waste is a problem that currently lacks a solution. Until now, the use of pineapple weevil waste as processed food is still lacking. To deal with pineapple weevil waste so that it is not just wasted, you can use pineapple weevil as a powder drink. Practical use makes powder drink popular with the public because of their easy serving. The purpose of this study was to determine the effect of the concentration of pineapple weevil extract and water on powder drink and obtain the best formulation to produce powder drink. The study used a simple completely randomized design method with 6 treatments, namely P1: (Pineapple weevil extract 10% + Water 90%), P2: (Pineapple weevil extract 30% + Water 70%), P3: (Pineapple weevil extract 40% + Water 60%), P4: (Pineapple weevil extract 50% + Water 50%), P5: (Pineapple weevil extract 60% + Water 40%), P6 : (Pineapple weevil extract 70% + Water 30%). Each formulation consists of 2 experimental units. The results of this study show that there is a noticeable influence between the formulation of pineapple weevil extract on water content, ash content, fiber content, antioxidant activity, solubility, and organoleptic (aroma, color, taste, and preference) of pineapple weevil-based powder drinks. The best treatment was obtained from the formulation of pineapple weevil extract 60% + water 40% (P5). The P5 treatment produced a moisture content (1,6%), ash content (0,55%), fiber (2,2%), antioxidant activity (70,7%), solubility (97,4%), color (4,7), aroma (4,2), taste (4,4), and liking (4,2).
