Abstract
The rapid development of food technology has an effect on increasing food production. Plastic materials (non-biodegradable) can be replaced with biodegradable packaging, such as edible film. In this study, an edible film was made using organic materials, namely aloe vera gel based as an edible film, mung bean starch can improve total solids and barrier properties and glycerol as a plasticizer. The purpose of this study was to determine the effect of the interaction between the differences in the addition of mung bean starch and glycerol to the characteristics of the edible film. The design used in this study was a Randomized Block Design with two factors, factor I is concentration of mung bean starch and factor II is concentration of glycerol and consisted of three replications, factor I consisted of three levels K1 (3%), K2 ( 5%), K3 (7%) while factor II also has three levels G1 (1%), G2 (1.5%), G3 (2%). The results of this study indicate that there is no interaction between the concentration of mung bean starch and the addition of glycerol on the characteristics of the edible film. Mung bean starch has a significant effect on the thickness, solubility, transparency, tensile strength, and water vapor transmission rate (WVTR) of edible films. The addition of glycerol significantly affected on the solubility and transparency of the edible film. The best results in this study were K3G2 treatment (7% mung bean starch and 1.5% glycerol) which resulted in a thickness value of 0.25 mm; solubility 32.96%; transparency 2.17 A/mm; tensile strength 0.75 MPa; elongation 10.48%; and WVTR 2.69 g/m2/day.
