Abstract

This study aims to determine the effect of seaweed type of Eucheuma cottonii with the addition of kenikir leaves in production of nori in the organoleptic. The addition of kenikir into nori, made from Eucheuma cottonii is to increase color intensity its nori as well, as its antioxidant. This study uses a simple randomized block design with 5 treatments and 4 replications. The parameters analyzed were water content, ash, protein, fat, crude fiber, carbohydrates, antioxidants, color intensity (L, a, b), texture and organoleptic tests (preferences, appearance, flavor and odor). Data analysis using Analysis of Variants (ANOVA), then continued with Duncan 's New Multiple Range (DNMRT) at the 5% level. The treatment used was the ratio of Eucheuma cottonii with kenikir : P1 (90% of seaweed : 10% of kenikir), P2 (80% of seaweed : 20% of kenikir), P3 (70% of seaweed : 30% of kenikir), P4 (60% of seaweed: 40% of kenikir), P5 (50% of seaweed: 50% % of kenikir). The results showed that there was no effect between the ratio of seaweed and kenikir to water content, ash, production efficiency, brightness (L), greenness (a-), yellowish (b +). The ratio of seaweed and kenikir had a very significant effect on, antioxidants, fat, fiber and protein. The best treatment was obtained in treatment P1 (90% of seaweed : 10% of kenikir) with a 12.30% of production efficiency, 5.87N / mm2 of texture, 40.20 of brightness level, -0.72 of greenish level, 4.57 of yellowish level, 9.87% of water content, 17.20% of ash, 5.62% of protein, 5.01% of fat, 61.90% of carbohydrate, 5.87% of fiber, 66.11% of antioxidant, and 3.10 of organoleptic flavor, 2.97 of odor, 3.43 of appearance, and 3.17 of preference.
