Abstract

After attention a proses of snack fryng, that this is a reason of scorched and made snack did,t growthis because of the temperature not stabil in sand because the last equipment after first fryng stop so the sand made not and if used can made snack scorched, so I have idea to fryng used” engine ” so the result of temperature stabil because the fryng to be would around so we can avold a scorched. View the result of snack fryng with a last equipment used before that, so we desaign equiepment that repair the lack of equipment used before that.. In fryng the silinder to be can catch 5 kg of snack and need 50 arround tube time to let ripen a snack with capacity is,So the produser of capasity is 5kg x 12= 60kg/jam. The warmth to fryng snack until ripe, when in 1 times of fryng proses have a snack capasity 5kg. Qkerupuk = m x Cp x ΔT, when :,m = massa snack first proces, Cp= snack calor spesifik 2,333 kj/kg οC. ΔT= T5 – T6, T5 = The ripe of snack temperature = 80 οC, T6 = Unripe if snack temperature = 25 οC. Qkerupuk = 5 x 2,33 x (80-25),= 640,75 kj. By the desaign of fryngsand snack equipment can made a summary such as: In this equipment the proses of fryng snack used tube as fryng equipment. With dimensi on of:tube long (l)=1000mm, Diameter in tube (D1)= 680 mm, Diameter out tube (D2)= 700 mm, weight plat (t) = 2 mm. Based on dimension of scale get data that prepare:tube quick fryng(V) = 2,1352m/s, quick motor around (n) = 50 rpm, maximum weight of snack and sand= 15 kg, need daya (P) = 3,248x10-3 kW, the capacity desaign of equipment= 60kg/jam, need warmth = 640,75 kj.
