Abstract

Antioxidants can be interpreted as compounds that have the ability to protected cells from the harmful effects of reactive oxygen free radicals by inhibited oxidation. Coffee contained high antioxidant polyphenol compounds derived from phenolic acids such as caffeine, chlorogenic acid, coumarin, ferulics and synapic acids. Coffee fruit Pulp contains antioxidant compounds that have the potential as natural antioxidant ingredients. Coffee pulp phenolic compounded consist mainly of 42.2% chlorogenic acid, 21.6% epicatechin, 29.4% isochlorogenic acid, and about 2% catechins, 2% routine, and other compounds. The purposed of this study is to determined the antioxidant content of the pulp and coffee beans through literature studies. The research method used is siystemic review. Systemic review is a research method that summarised the results of primary research to present more comprehensive and balanced facts. The data used are secondary data. obtained from data sources in the form of books, articles and scientific journals both offline and online that are related to antioxidant activity in the pulp and coffee beans (Coffea sp.). Analysis of the data used is an bibliographic annotations related to the pulp and coffee beans. Annotation means the conclusion simple from an article, book, journal, or several other sources of writing, while the bibliography is interpreted as a list of sources of a topic. Based on the results of research that has been carried out using the systemic review method, it has been founded antioxidant compounds with considerable amounts. Although not as much as in coffee beans, coffee pulp also contained antioxidant compounds. One such compound is the polyphenol compound founded in coffee believed to be the largest contributor to antioxidant activity, namely chlorogenic acid. In addition, secondary metabolites are founded in the form of alkaloids, flavonoids, terpenoids, saponins and tannins.
