Abstract

Sprout or commonly referred to as bean sprout are young plants that thrive through the process of germination of seeds. Sprouts commonly consumed by the people as fresh food or fresh vegetables side dish. The sprout of petai cina (Leucaena leucocephala) can be used to equip protein needs since this plant has a high enough protein that is 24,5%-46% and germination can increase protein content. This study aimed to determine the effect of age on the protein content of petai cina sprout (Leucaena leucocephala). The research used a quantitative research method with ANAVA test that held on 18-29 November 2019 at Chemistry Laboratory University of Muhammadiyah Malang. The total amount of research subject was 24 sprout of petai cina (Leucaena leucocephala) with 6 repetition, while the object of used the research was content of protein. This study was the result of average protein content. The result of this study showed that there was an effect of germination age on the protein content of petai cina sprout (Leucaena leucocephala), so the further test was carried out by Duncan test. The Duncan test states that the treatment of 1 day to 4 days did not different significantly. So the conclution was the highest protein content in 1 day treatment 7,43%.
