Abstract

Apples are generally consumed to meet the needs of fiber for humans. One of the popular apples is the Malang apple. Favorite apple types in Malang are Manalagi, Romebeauty, and Anna. In 2010 the Central Statistics Agency (BPS) stated that the number of apple plants reached 1,974,366 trees with a production of 842.80 quintals per year, while the number of broken apples (rotten / damaged) in Malang were 10% of the apple production which reached 84 , 00 quintal. From these problems, this research will create a food diversification product from various types of apples which will be processed products, namely sorbet. The sorbet manufacturing process uses a stabilizer, CMC (Carboxy Methyl Cellulose). The purpose of this research was to determine the effect of apple types and CMC concentration on quality of fruit sorbets. The method used in this study was a completely randomized design (CRD) with 16 treatments and 2 replications. The treatment of this study used CMC concentrations of 0%, 0.25%, 0.50%, and 0.75% and the types of apples used were Manalagi, Fuji, Romebeauty, and Anna. Research examines the content of vitamin C and organoleptics including texture and taste. The data analysis technique used in examine vitamin C is Kruskall Wallis and Mann Whitney, while the organoletic test uses the average calculation. The results of the study showed that there was an effect of apple type and CMC concentration on the quality of fruit sorbets. The best treatment was found in Anna apples, while the best CMC concentration was 0.25%.
