Abstract

This research executed in August 2007 having place of in Laboratory of husbandry and Laboratory chemical University of Muhammadiyah Malang. Purpose of this research is to know usage influence of corn and old kept to rancidity of chicken sausage and interaction between usages of corn and old kept to rancidity of chicken sausage. Matter applied in this research is chicken flesh part of chest, young yellows corn, and other addition-agent, tapioca flour, cooking oil, sand sugar, salt, garlic, sausage exuviates. Method applied is experiment, with Completely randomized design ( RAL) factorial pattern 4 x 4 with 3 restating, what consisted of (0%,10%, 20%, 30%) and old kept with temperature 50 C during ( 0 day, 3 day, 6 day, 9 day). Interaction between usages of corn and old kept shows very influence reality (P<0,01) to value TBA at chicken sausage. Usage of corn influential very reality (P<0,01) to value TBA at chicken sausage. Old kept shows very influence reality (P<0,01) to value TBA at chicken sausage Based on result and solution of research is upper, hence inferential as follows: that usage percentage excelsior of value corn TBA smaller showing rancidity of chicken sausage smaller. With old kept during 0 day, 3 day, 6 day and 9 day will result rancidity value change at chicken sausage yielded, that is its (the rancidity value is increasingly increases. Interaction between usages of corn and old kept obtained by best combination at usage of corn 10% and old kept 6 day. Result of ration value TBA chicken sausage with depository stripper during 9 day chicken sausage has shown is rancid. Therefore is required existence of continuation research with usage percentage of corn which more and added with test physical and test microbiologic. So is known damage in physical.
