Abstract

Milkfish (Chanos chanos) is one of main commodity of Indonesian fishery. Fish is a food material which easily got biological damage caused by enzyme or decayed microbe. Fresh fish will start to decay in fifth hour to eighth hour after captured Preservation effort actually are various, from using low temperature to radiation, also several findings in field shows that formaline are used mainly to preserve the fish. The research purpose is finding out about influence of Various Galangal (Alpinia galanga) Filtrate in Milkfish (Chanos chanos) fish submersion to bacterial amount as biology learning source. The research type is True Eksperiment. Experiment design uses Complete Random Design (RAL), with 6 treatments (0%, 10%, 20%, 30%, 40% and 50%) and four time repeats. The research is started in December 2014 in Biology Laboratory, University of Muhammadiyah Malang. Research result shows that the higher filtrate concentrate, less bacterial found. In 50% concentrate, there are more optimum bacterial inhibition compared with other concentrate. The research also shows result that fresh fish meat, no fishy smell and the meat texture is not mushy. Process and product from this research are analyzed and modified in research journal form to be used as biology learning source as Education Unit Level Curriculum syllabus of Biology for High School grade X Semester 1, KD 2.2 - Describing Archaeobacteria and Eubacteria characters also their role for life
