Abstract

Nata de coco is a processed food made from fermented coconut water with the help of Acetobacter xylinum, to produce thick white cellulose and chewy texture. The success of Nata de coco fermentation by Acetobacter xylinum is influenced by the availability of nitrogen sources. The nitrogen source that is often used by nata producers is ammonium sulfate (ZA food grade), but the availability of ZA food grade in Indonesia is still difficult to find and expensive. The alternative that can be used in meeting nitrogen needs now is by utilizing protein sources. The purpose of this study was to determine the effect of utilizing Amaranthus tricolor L. filtrate as a source of organic nitrogen in the manufacture of nata de coco to the values of thickness, yield, and organoleptic nata. The type of research used is True Experimental Research with research design The Posttest- Only Control Group Desaign Non-factorial. The concentration of Amaranthus tricolor L. filtrate used was 0 ml/lt, 35 ml/lt, 40 ml/ lt, 45 ml/lt, 50 ml/lt, 50 ml/lt, and 55 ml/lt. Data analysis techniques used were One-way Anova Test and Duncan Real Distance Difference Test 5%. The results showed that there was an effect of the concentration of Amaranthus tricolor L. filtrate on physical tests in the form of thickness, yield, and organoleptic. The concentration of 35 ml/lt resulted in a thickness of 13.36 mm, yield of 72.9%, and intensity of color, texture, smell, taste that panelists tend to like. Based on Duncan's 5% test, the treatment of 35 ml/lt was significantly different from the other treatments.
