Abstract

Agricultural products such as cassava have a relatively short shelf life. Through home industry, the processing of cassava is able to increase the shelf life and to gain more added value to the cassava products. In this analysis of added value, Hayami method was used. The research was conducted in alen-alen home industries within the regency of Pacitan, specifically in Cangkring Village, Ngadirejo Sub-district, Pacitan Regency. The aims of this research are as follows: (1) to know how to process from raw cassavas to Alen-alen, (2) to determine the amount of added value of alen-alen home industries, (3) to know the absorption of labor in the alen-alen home industries, (4) to determine the profit of the alen-alen home industries. The result of the research shows that the alen-alen home industries use traditional method to process alen-alen. The calculation shows that the added value from cassava to alen-alen is Rp. 7.496,05/kg or 64,95%. The home industries also absorb the labor as many as 0,037/kg. then, the profit gained by the home industries is 6.737,92/kg. with the percentage of profit as many as 56,62%, the R/C value ratio of the alen-alen home industries at Cangkring Village is 2,71 which means the process is efficient and profitable.
