Abstract

The commodity of bean (Glycine Max L.) plant is truly useful for providing the sources of energy, mineral, and vitamin. Likewise, its role as the affordable protein sources, bean (Glycine Max L.) is able to give a realistic alternative as meat, cheese, and milk substitution. The bean (Glycine Max L.) product can be classified into two groups: non-fermented food from traditional industries such as “tofu” (tahu) and “kembang tahu”, besides another fermented food in our country is “tempe” and soy bean sauce (kecap). “Tempe” is kind of food which made from fermented bean (Glycine Max L.) by using kapang rhizopus (ragi tempe). “Tempe” is rich of fibers, calcium, vitamin B, and mineral. “Tempe” is much consumed in Indonesia, but nowadays “tempe” has developed all over the world. Especially for vegetarians in the world who found “tempe” as meat substitution. According to the statement problem, this research has purpose to analyse the cost structure in small industry of “tempe snack” and the influence of the raising bean (Glycine Max L.) cost to the producer of “tempe snack”. The consideration of the research taking place was decided through random sampling. However, the data collection used the primary data and secondary ones. There are two ways of the primary data collection, observation and interview. The analysis method conducted in this research was cost analysis, analysis of balancing capital spot (BEP) and t-test analysis. Based on the t-test analysis, BEP production volume rose to Rp. 20.078, BEP cost production at Rp. 30.698, the income degree was up to Rp. 20.055 and R/C Ratio was Rp. 25.445. Therefore there was the different between before and after the raising bean (Glycine Max L.). This was approved by t value was bigger than t table.
