Abstract

Papaya is a relatively inexpensive agricultural commodity that can be reached by all society. Papaya fruit is easily damaged when there is no processing. Meanwhile, processed papaya products have high economic value and great demand by domestic and foreign consumers. Processed products from papaya are fruit leather, jelly, jam, candy, even one of them is sweet dried papaya pickle. Papaya fruit used in making sweet dried papaya pickle under-ripening papaya. Under-ripening papaya fruit does not have such an attractive color so that there is the addition of natural color using natural extracts of red rose and dragon fruit skin. In addition to functioning as natural dyes, roses have a high anthocyanin content and also dragon fruit skin has a high antioxidant content, where the two ingredients have benefits our health. The purpose of this study is to get a good quality sweet dried papaya pickle. This research was conducted with the addition of rose flower extract and dragon fruit skin with various concentrations (25%: 25%, 30%: 20% and 40%: 10%) and sugar concentrations (30%, 40% and 50%). Tests carried out in this study included water content, total sugar, pH, anthocyanin, activity of antioxidants, texture, color, aroma and taste. The results showed that there was interaction with the addition of rose extract : dragon fruit skin and sugar. The best results based on Indonesian National Standart (SNI) was treatment with addition of rose extract: dragon fruit skin (25%: 25%), with sugar concentration (50%). The results obtained were conditions (smell and taste) (2.70), moisture content (39.63%), sugar (57.30Obrix), pH (5.41), anthocyanin (66.60mg/L), antioxidant activity (76.10%).
