Abstract

Broiler meat is one of the most important sources of animal protein, so availability must always be guaranteed both in terms of quantity and quality. This study aims to 1) Know the process of cutting broilers halal 2) Knowing the safety of food from cutting broiler chicken to marketing 3) Knowing consumer knowledge about the safety and halalness of broiler chickens. This research was conducted in the Mergan market. The demand for chicken meat in the city of Malang, which is very high, causes the growth of small-scale slaughterhouses in the home or in traditional markets. Data collection was done by interviewing 8 chicken cutter producers by census and consumers by accidental sampling. The method used is descriptive analysis. Based on the results of research and discussion at Pasar Mergan, halal cutting has still not been implemented because some cutters still do not know the right direction to cut chicken. Most of the sanitation in Mergan Market does not meet the requirements, especially with the results of carcasses of chickens that are not washed with running water. Most producers' hygiene has met the requirements. The halalness of the chicken roiler at the Mergan Market is that all consumers are sure of their halal status. According to consumers, sanitation mostly fulfills seen from tools used by producers, buildings that are suitable for use and chicken sellers look clean when handling chickens. Most hygienic according to consumers have also fulfilled because all the colors of chicken meat are fresh, namely white anger and no strong odor.
