Abstract

In Indonesia, approximately 80% apple fruit is produced in Batu-East Java, However, the farmers are able to sell apporximately 60-70% of the apple fruit, average. this study aims was to analysis the effect of apple flour proportion into cookies physicochemistry and organoleptic quality and to analyze the increase of the apple cookie antioxidant activity. This research was done by using nested method with 2 factors. The first factor was the varieties difference of apple (Malus sylvestris and Malus domestica). The second factor was the proportion of apple flour (20%, 25% and 30%). In addition, comparison with controls was carried out (100% wheat flour). The statistical analyzing were using Anova and DMRT (Duncan’s multiple range test) further testing, while the organoleptic test was using hedonic method descriptive qualitative analysis (questionnaire). The result showed that Manalagi apple cookies had fiber content, and higher antioxidant activity than Anna apple cookies, while Anna apple cookies had brighten color and more crunchier than Manalagi apple cookies. The antioxidant activity increased as the addition of the apple flour. Based on the result, F2A (25% Anna apple flour: 75% wheat flour) and F2M (25% Manalagi apple flour: 75% wheat flour) treatments were relatively best treatment from all based on Modus method best treatment test
