Abstract

The purpose of this research is to know the influence of prolonged storage of Total Plate Count and the presence of E. coli in pasteurized milk cup taste of melon and strawberries. This research is divided into 4 treatment and repeated as much as 3 times. Each treatment i.e. P0 = pasteurized milk cup recently produced or 0 day (controls), P1 = storage of pasteurized milk cup for 4 days, P2 = storage of pasteurized milk cup for 8 days, P3 = storage of pasteurized milk cup for 12 days. The parameters observed in this research is the quality of Microbiology in pasteurized milk cup with prolonged storage. The data were analyzed using a complete Randomized Design, continued with test BNT. The results showed that the power save pasteurized milk cup very real effect (P < 0.01) to quality milk melon flavor good microbiology as well as strawberries, Additionally research indicates that there is no E. coli. Conclusions in this study is there is the influence of prolonged storage of TPC with the value F count greater than F table i.e. 9.1 for the taste of melon and strawberry flavor to 12.86. There is no influence of retention against E. coli in pasteurized milk cup taste of melon and strawberries. The presence of E. coli bacteria in pasteurized milk no (-) so that the pasteurized milk and strawberry melon flavors they would not of pathogenic E. coli bacteria.
