Abstract

Background: Manalagi Apple is one fruits which antioxidant activity. One of its processed products is apple cider. The process of making the apple cider is, first, washing, crushing, boiling, filtering, adding other ingredients, and packing.The process which can degrade the chemical compounds in apples are because of the repeated heating processes and the contact with metal materials. ABTS solution is one of the reagents used in the antioxidant test, which can represent the presence of free radicals, can be detected by a spectrophotometer UV-Vis. IC50 values indicate the level of inhibition of free radicals as antioxidants. Objective: To identify the comparison of antioxidant activity in the manalagi apple cider and manalagi apple based on IC50. Method: The antioxidant testing is using ABTS method with spectrophotometer UV-Vis Result and Conclusion: Wavelength of 737 nm. The IC50 value of manalagi apple value is 36,848.9 ppm and IC50 of manalagi apple cider is 3,144,161.3 ppm. The antioxidant activity of the apple cider is lower than the fresh apple so that the processing of apple cider can degrade the antioxidant present in the apple.
