Abstract

Edible film is a biodegradable packaging that is easily described in the environment. Edible film is a thin layer that can be consumed which is usually used to pack food. A component of making edible film is cassava starch. Cassava starch contains of 17% amylose and 83% amylopectin. However, the weakness of edible film starch-based is resistant to moisture and barrier properties against low water vapor. Edible film is not only functioned as a packer but also requires the presence of antioxidants as active substances that can inhibit the oxidation process. Temu hitam contains bioactive compounds such as phenols, saponins, essential oils, flavonoids, curcuminoids, and other minerals that can inhibit the oxidation process. The purpose of this research are: To know the interaction of temu hitam and cassava starch toward the result of edible film, To know the effect of cassava starch concentration on edible film, To know the influence of temu hitam of to edible film produced. The research method used was: Group Randomized Design (RAK) with 2 factors. The first factor was the difference of concentration of cassava starch that was 2%, 3% and 4%. The second factor was the difference of temu hitam filtrate concentration that was 3%, 5% and 7%. The analyzed parameters were thickness, tensile strength, elongation, solubility, transparency, antioxidant of edible and film solution, WVTR. The results showes the effect of cassava starch concentration and concentration of temu hitam filtrate on thickness, tensile strength, elongation, solubility, transparency, antioxidant of edible and film solution, WVTR. Based on the result of this research, the best edible result on P3T3 treatment (4% cassava starch and 7% temu black filtrate with thickness 0,15 mm, tensile strength 0,44 MPa, elongation 16,61% solubility 37,79%, transparency 2,87 A456 / mm, WVTR 14.11 g / m2 / day, antioxidam 32.15 A517 / mm.
