Abstract

Ice cream is a food product that loved by many people in various age levels, many types of ice cream are circulating in the society with so many various of taste and color vary. Ice cream that are currently popular in the world community is ice cream with black color or black ice cream. Ice cream in this study was made by using dried banana leaf ashes as natural black dye and made by using different types of milk that is cow's milk and goat's milk. The use of different types of milk with a combination of ash is to see the characteristic differences of ice cream produced. This research uses Nested Design method which consists of 2 factors. Factor I is the type of milk that is cow's milk and goat's milk and factor II is dried banana leaf ash concentration consisting of 5 levels ie 0%, 1%, 2%, 3% and 4%. The parameters observed included the activity of moisture content, ash content, total dissolved solids, protein content, fat content, pH, viscosity, melting speed, brightness (L) and organoleptic (flavor, aroma, color, texture, favorite). The results of the analysis showed that the best treatment was found in S1K0 (0% cow milk + dry ash 0%) with moisture content 65,68%, ash content 1,08%, total dissolved solids 34,32%, protein content 5,35% fat content 15,15%, pH 6,38, viscosity 22,67 d.Ps, melting speed 19,20 minutes, brightness (L) 62,83, organoleptic taste 3,77, aroma 3,63, color 3,67, texture 3,27, and favorites 3,60.
