Abstract

Background : Apple is the one of fruits which contains antioxidants. One of its processed products is apple cider. The process to get apple cider is by washing, crushing, boiling, filtering, adding other foods ingredients, and packing. All the processes above can degrade the apple compounds. The ABTS solution is one of preaction which able to shows the presence of free radicals detected by the UV- Vis spectrophotometer and can be represented by the IC50 value as the inhibition level of a substance towards free radicals. Aim: To identify the difference of antioxidance activity between apple cider with fresh‘Rome Beauty’ apple based on IC50 value. Method: Fresh ‘Rome Beauty’ apple and processed apple cider products were tested for antioxidant activity with ABTS method to obtain IC50 value using UV-Vis spectrophotometerat maximum λ of 737 nm. Result and Conclusion : ABTS solution has maximum λ in737 nm, then obtained IC50 value.‘Rome Beauty’ apple obtained IC50 value of 49.870,8 ppm and processed apple cider products obtained IC50 value of 6.724.458,4 ppm. IC50 value of processed apple cider products is higher than the value of IC50 fresh ‘Rome Beauty’ apple, this is because the processing of apple cider can degrade the content of apple compounds that have antioxidant activity.
