Abstract

Chili fruit is a plant originating from Indonesia which is used as a medicinal plant and traditional herbal medicine. Storage of herbal chili is very susceptible to attack by postharvest diseases, synthetic fungicides are the main raw material used to control poisons but can endanger the health of consumers so we must find alternatives. The purpose of this study was to determine the effect of hot water treatment temperature of 55oC with soaking time to maintain the quality of chili herbs and control post-harvest disease. This study used a randomized block design which was arranged factorially with 2 treatment factors factor 1, namely the treatment of hot water with a temperature of 55oC factor 2 ie immersion time consisting of W1T1 immersion of hot water 0 minutes, W1T2 soaking time hot water 10 minutes, W1T3 water immersion time hot 15 minutes, W1T4 Hot water for 20 minutes. W2T1 Soaking time 0 minutes, W2T2 Soaking time Water Temperature Room 10 minutes, W2T3 Soaking time Water Temperature Room 15 minutes, W2T4 Soaking time Water Temperature Room 20 minutes. Based on the results of research that has been done it can be seen that the treatment of hot water and soaking time shows a very real effect on the percentage parameters of the weight of the fruit attacked by the disease, the percentage of disease severity and the intensity of the disease attack, weight loss. From the results of the study it was found that the treatment of hot water temperature of 55oC all the soaking time got the best results.
