Abstract

Strawberry fruit comes from the American continent. The first type of strawberries grown in Indonesia is Fragaria vescaL. According to the Central Bureau of Statistics (2011), Indonesia's strawberry production in 2009 amounted to 19,132 tons and in 2010 experienced a production growth of 29.87% (5,714 tons) resulting in the production of strawberries in 2010 amounted to 24,846 tons. Orange is one type of horticultural crops that have high economic value because of the great demand by the community. Citrus plants are the most cultivated plants in Bali, especially the Siamese orange species (Suamba et al., 2014). According to the Central Bureau of Statistics and Directorate General of Horticulture, the production of tangerines in 2014 reached 51,098 tons. Fruits and vegetables that have high respiratory rates show more rapid tendencies and short shelf life. According Pantastico (1989) edible coating is one method used to extend shelf life and maintain the quality of the fruits stored at room temperature. The coating on the fruit generally does not use natural ingredients such as fruit coating using fungicides. But there is another alteratif for the problem is the natural fruit pelaisan using aloe vera and yeast. Aloe vera besides harmless also contains antioxidants, while yeast itself is used to inhibit pathogen attack against harvested fruits. The purpose of this study is to obtain an effective coating and level of maturity to extend the shelf life of strawberries and oranges. In this study using RAK with 2 treatment factors repeated 3 times. The treatment used is coating and level of maturity. The observation parameters include: Weight Loss, Color Changes, Fruit Violence, Vitamin C Content, TSS (Total Soluble Solid), Percentage of Disease Attack, Intensity of Disease Attack and Fruit Save Period. The data obtained were analyzed using the F (anova) test to know the differentiation of the treatment, if there was a significant difference followed by Duncan distance test (UJD) with 5% level, the data presented in tabular form.
