Abstract

Indonesia healthy profile research result from the health department showed that East Java is the province with high malnutrition cases. One of the attempts to solve this problem is by processing a variety of nutritious plantation into snacks loved by children such as Moringa leaf (Moringa Oleifera). Moringa processing research was already done many times such as processing it into a jelly candy, however it is less interesting because of Moringa unpleasant taste. Therefore, additional component administration is needed which is Orange (Citrus Aurantium) extract. The aim of this study is to determine the effect of Orange extract administration to Moringa jelly candy nutrition levels and organoleptic. This research was done in three stages. The first stage was producing the jelly candy. The second stage was nutrition levels and organoleptic test. The third stage was using the research result as learning source. This research is true experimental using post only control design. Research plan used was complete random five repetition factorial on five treatments which were one control treatment (P0) and four modified treatment (P1, P2, P3, P4). The given treatment were 10ml, 20ml, 30ml, and 40ml. Analysis technique used was Kruskal Walis Analysis and One Way Anova. One Way Anova test result showed that there are different effects of Orange extract administration to Moringa nutrition levels and organoleptic. The highest protein levels of Moringa jelly candy was achieved on 10ml Orange extract administration and the highest vitamin C was achieved on 40ml Orange extract administration. Organoleptic test by Kruskal Walis Analysis showed that there is a difference of Moringa jelly candy taste, scentm and texture in panelist receptivity. The highest was at 40ml Orange extract administration. On the other hand, there is no significant difference in color between each treatment. The result of this research can be used as learning source handout.
