Abstract

Sea fish is the kind of fish that much preferred and consumed because of the high nutritional contents, one of them is tuna. People who are less concerned about their environment can cause food contamination. Contamination comes from nature such as sea, or from the pollutants of vehicles and the environment. The aim of this research is to analyze the differences of lead content (Pb) and microbial contamination on fresh and smoked tuna (Euthynnus affinis) in Tuban district highway as biological learning source. The results of this study will be adjusted to the feasibility of its consumption based on the SNI of 2009 on the contamination of heavy metals and microbes in food in Indonesia. The type of this study was descriptive comparative, while for the method using SSA (Atomic Absorption Spectrophotometric) for lead (Pb) and TPC (Total Plate Count) test for the microbial testing. The results showed that the average of lead (Pb) in the smoked tuna was higher than on the fresh tuna, with the highest value of smoked fish is in the first trader of 22, 20 (mg / kg), and the highest value of lead (Pb) in the fresh tuna is present on the first trader of 14.41 (mg / kg). The result of the microbial contamination average (CFU / ml), the highest average value in fresh fish samples that of the third trader of 4.8x109 (cfu / ml), for smoked fish in the second trader at 8.6x106 (cfu / ml). The results were compared with the maximum limit value of SNI 2009, the total of 8 traders of fresh tuna and unsafe fumes consumed. the results of this research is used as the Source of biological learning that is made as a poster for high school grade X.
