Abstract

Salam leaf is a kind of leaf herb is used for a variety of food and drugs has a property that can be utilized in everyday life. Egg is a complete nutritional capsules. Fat content in eggs of about 5 g. Fat content in eggs can result in an increased content of cholesterol in the body, making the basis for the reseachers to reduce cholesterol content in egg. So the egg can still be consumed by people who are afraid of cholesterol in order to maintain the health of the body. One way of lowering cholesterol in eggs is by using salam leaf in the solution process of soaking the egg. The general aim of this study was to determine the effect of condensation of salam leaf in the process of soaking the egg yolk cholesterol content. The method used in this research is completely randomized design (CRD). Solution immersion treatment salam leaf used in this study consisted of four levels of treatment (control, 0.5%, 0.75% and 1%) and replicates that used as many as four times. The results showed that the higher the solution concentration used in the cholesterol content decreases. Analysis of variance showed that treatment of egg immersion in solution of salam leaf significant (P<0,01) on egg cholesterol content. Significant difference test also showed the smallest decrease in an optimal treatment is at 0,75% solution consentrasion. The research concluded that the treatment solution concentration salam leaf (Syzygium polyanthum) in the process of soaking lowering cholesterol content of egg yolk. Up to 1% concentration level solution salam leaf used in the process of soaking the lower the cholesterol content of egg yolk. Treatments that effectively lower cholesterol content of eggs wre soaking treatment with 0.75% concentration.
