Abstract

Banana ( Musa paradisiaca ) as one of the fruit crop has great potential processed into flour as wheat flour substitute, the main constituent components of the banana are carbohydrates ( 17.2 to 38 % ). In making these brownies starchy flour that is used is a soft type low water absorbent and has a medium level of gluten and carbohydrates in the form of starch or starch. The purpose of this study is ( i ) Determine the influence of immersion time and the concentration of citric acid marinade solution to physical and chemical properties of ripe banana flour varieties king ( ii ) Determine the influence of the proportion of the addition of ripe banana flour varieties of the king against the physical, chemical and organizational brownies ( iii ) knowing the quality of treatment best brownies plantain flour. This research was conducted in two phases: first manufacture ripe banana flour varieties King ( Musa paradisiaca ) with citric acid immersion ( immersion time study and solution concentration marinade ) . The method used in this study was to use a simple randomized block design ( RBD) with 2 stages . The first phase of the citric acid concentration and immersion time , the second stage of the manufacture of ripe banana flour brownies are taken from the best treatment , and compared with conventional brownies ( using only white flour ) and brownies are sold on the market ( well known by the public ). Research shows that the banana flour is the best flour treatment with citric acid concentration of 0 % and a long soaking for 10 minutes with the character of flour : water content of 27.86 %; yield of 0.28 %, acidity 4.71; levels of vitamin C 0,12% starch content of 27.86 %; intensity brightness 67.7; intensity of redness 5.35; intensity Yellowish 14.95.
